Carrot and Cheddar Cheese Roll
1 package Cream Cheese
1 cup carrots, finely shredded
1/4 cup parsley, finely chopped
1/2 cup cheddar, finely shredded
Bring the cream cheese up to room temperature. Combine all the ingredients into a mixing bowl. Stir them all together either with a large spoon or with a hand mixer. Form into a ball. Place on a sheet of saran wrap and roll into a log. Let sit in the refrigerator about 30 minutes so it becomes firmish and serve.
