QUICK COOK RECIPE: Coconut Cream Pie Not From Scratch

Coconut Cream Pie - Cheater

This is less than even semi-homemade but I was in a pinch and not cooking for a gourmande so it worked.

Coconut Cream Pie – Cheater

1 pre-made graham cracker pie crust
1/4 cup chocolate chips
1 tablespoon milk
1 instant vanilla pudding mix and milk
1 teaspoon vanilla extract
1 cup sweetened coconut

In a microwave, heat up the chocolate chips and milk so that the chocolate melts. Stir to combine. Spoon the chocolate onto the crust and let sit to the side.

Make the instant vanilla pudding according to the directions on the package. Add the vanilla extract and coconut. Stir to combine.
Pour the coconut cream into the pie crust and let it set up for about 30 minutes. Serve.

Well you could make a pie crust with flour and butter or shortening. I would not suggest a biscuit but who knows!

Sweetened Coconut - that is the shredded coconut and not the milk.

But, you could totally use your coconut milk instead of the regular cows milk
