1½ cups flour
1 cup sugar
½ teaspoon salt
1 teaspoon baking soda
1/3 cup unsalted butter
½ teaspoon vanilla
¼ cup chocolate chips - optional
¼ cup chopped walnuts - optional
Preheat oven to 350 degrees. Grease and flour a loaf pan.
In a bowl, sift together flour, sugar, salt and baking soda. In another bowl, mash bananas. Then cream together butter and bananas; whisk in eggs and vanilla. Add dry ingredients to the banana mixture and mix thoroughly. Mix in chocolate chips and/or nuts, if using. Pour into prepared pan and bake for 60-65 minutes until a tester comes out clean. Makes one loaf. Cool in pan for 15 minutes, remove and cool completely.
