RECIPE: Cinco De Mayo - Guacamole

Makes 1 1/2 Cups

1 ripe avocado, pitted, peeled, coarsely chopped
Juice of 1/2 Lime
2 tablespoons white or red onion, finely chopped
1 tablespoons fresh cilantro, finely chopped
1 jalapeno, finely chopped, seeded
1/2 teaspoon kosher salt
1 tomato, finely chopped, seeded

In a large bowl mash the avocado and lime juice. In a small bowl or mortar and pestle, stir together onion, cilantro, jalapeno, and cilantro and then mash together so that they sort of meld together and release some of their juices. Add mixture to avocado and then add tomato. Stir to combine. Add more salt if desired.
