RECIPE: Spoonbread

VIOLA’S SPOON BREAD

1/2 cup yellow corn meal
1 stick butter
4 eggs, beaten
2 cups boiling water
1 pint milk
1 teaspoon salt
3 teaspoons baking soda

Preheat oven to 350. Put cornmeal in a baking dish and add boiling water. Using a whisk, stir in butter. Whisk well. Add milk and eggs, then salt and baking powder. Stir well. Bake for 45-60 minutes.

Hi!

I usually make it with roast meat. It is really good with game bird but that is just because that is how I was introduced to spoon bread as a small child.

It is great with roast chicken and anything that you give a lot of flavor- a lot of spice - because it has such a mellow flavor that it works well with a lot of spices.
