Tapenade Toasts


IMBB#25 - Stale Bread

Stale Bread? Ick? Noooooooooo. Delicious. Well it can be. It is just what you make of it. IMBB's newest blog event will show all of us many creative ways to use that stale bread. So when the round up is complete make sure you check it all out. Please, no moldy bread though. That is not on my list.

16 slices of day old Baguette
Olive oil
16 teaspoons tapenade
5 oz goat cheese
pepper

Preheat oven to 400 F. Place the baguette slices onto baking sheet. Drizzle with olive oil on both sides of bread. Spread 1 teaspoon of tapenade on top of the baguette slices. Cut the goat cheese log into 8 slices. Then cut those goat cheese rounds in half. Place on top of the tapenade and slightly flatten the cheese. Place in oven and bake until cheese bubbles and browns slightly, about 7 minutes. Remove from oven and place on serving platter.
