RECIPE: Pea Soup

Fresh Pea Mint Soup
Serves: 4

1 teaspoon unsalted butter
1 teaspoon walnut oil
1 small onion
4 cups water Fleur de Sel
Pepper
3 1/2 cups petite peas
10 mint leaves and 4 mint sprig tops for garnish
1-cup cream

In a medium saucepan, add butter and oil. Heat over medium-low heat until the butter has melted. Add chopped onions and cook for 10 minutes, do not brown. Add water and season with salt and pepper. Raise heat to medium-high and boil, and then reduce to medium-low and simmer for 10 minutes. Add peas. Cover pan and cook until it begins to boil, three minutes. Then, uncover and continue to cook for 2 minutes. Add mint leaves. Remove from heat and cool slightly. In a food processor, blender, or with a hand held blender, puree the soup. Strain the puree through a fine sieve. Return to saucepan and add cream. Heat until warmed through. Serve with the mint sprigs.
