RECIPE: Avocado and Crab with Lemon Mayonnaise Finger Sandwich

Avocado and Crab with Lemon Mayonnaise Finger Sandwich
Serves: 8

2 teaspoons lemon juice
½ cup mayonnaise
pepper
1/2 pound crabmeat
1 avocado, mashed very smoothly
8 slices white bread, crusts removed

Combine mayonnaise and lemon juice until well combined. Add pepper to taste. Stir in crabmeat. Spread a thin layer of avocado onto the bread. Then smooth on a slightly thicker layer of crabmeat on top. Top with other slice of bread. Cut in half on the diagonal.
