RECIPE: Couscous with Dried Apricots and Pine Nuts

Couscous with Pine Nuts and Dried Apricots
Serves 4

2 cups water
1 1/4 cup couscous
2 tablespoons, dried mushrooms, fine chop
salt and pepper
1 garlic clove minced
1/2 cup dried apricots, thin slivers
1/2 teaspoon dried thyme
1/2 cup pine nuts, toasted
2 tablespoons olive oil

Bring water, mushrooms, salt, pepper, garlic, apricots and thyme in a pot to a boil and turn off heat. Mix in couscous and pine nuts. Cover pan until the couscous has absorbed all the water and is tender, about 10-15 minutes. Fluff couscous with fork and fluff in olive oil.

Don't know what to say about the genius bit, but yeah, the parathas were easy to make. saffron hut and shammi also have step- by -step instructions on making them . Maybe you should give them a look and then try. Am sure you'll have fun.

loved this recipe of yours. I've recently started using cous cous and I have some pine nuts sitting in the cupboard. I guess time for it to come out .
