RECIPE: Mini Cheese Frittatas
Mini Frittatas
Makes 3 Dozen
Vegetable Cooking Spray
18 Large Eggs
2 teaspoons coarse salt
¾ teaspoon freshly ground pepper
1 tablespoon fresh thyme
16 oz bacon, cooked crisp and crumbled
1 cup broccoli florets, cooked and finely chopped
2 cups tomatoes, seeded and diced
1/ cup finely grated Mozzarella cheese
Preheat oven to 400. Lightly coat mini muffin tins with cooking spray; set aside. Whisk eggs, salt, pepper and thymes in a large bowl; set aside. In a small bowl, combine bacon, tomatoes, broccoli and mozzarella and stir to combine. Place slightly less than a tablespoon of the mixture into the bottom of the mini-muffin tins. Pour egg mixture into the tins. Bake until set, 10 minutes. Serve warm

Don't know if you're still checking comments, but I'd love to make these this weekend for a gang... is it supposed to be 1 cup of Mozzarella, or was that supposed to be a fraction?
